Macro-Friendly Mac and Cheese

INGREDIENTS:

  • 8 oz (227 g) Barilla Protein+ Elbows Pasta (half a box)
  • 170 g reduced-fat shredded cheddar cheese (1 ½ cups)
  • 240 ml fat-free Fairlife milk (1 cup)
  • 2 tbsp plain Greek yogurt (non-fat)
  • 1 tbsp (14 g) light butter
  • 1 tbsp (8 g) all-purpose flour
  • ½ tsp garlic powder
  • ½ tsp mustard powder (optional)
  • Salt and pepper to taste

INSTRUCTIONS:

1. Cook the Pasta:

  • Boil the pasta according to the package instructions. Drain and set aside.

2. Make the Sauce:

  • In a medium saucepan, melt the light butter over medium heat.
  • Whisk in the flour to create a roux, cooking for 1-2 minutes until lightly golden.
  • Gradually pour in the fat-free Fairlife milk, whisking continuously to prevent lumps. Cook for 3-4 minutes until the mixture thickens slightly.

3. Add Cheese:

  • Lower the heat and add the shredded cheddar cheese, stirring until completely melted.
  • Mix in the Greek yogurt, garlic powder, mustard powder (if using), salt, and pepper. Taste and adjust the seasonings as needed.

4. Combine:

  • Add the cooked pasta to the cheese sauce, stirring until evenly coated.

5. Serve:

  • Divide into 4 equal servings, which is approximately 172.5 grams per serving.
